Pak Choi “Green” is one of those satisfying vegetables that rewards you quickly. It’s a fast-growing leafy green with round, smooth, thick broad leaves and it’s brilliant in the kitchen.  Toss it into stir fries, add it to soups or slice it fresh into salads. 

It’s best direct sown once conditions and soil temperatures are stable. If the weather’s being unpredictable, start it in a mini greenhouse and transplant once seedlings are strong. 

Because it’s a brassica, it can be a target for caterpillars, net it during white cabbage moth season (peak autumn and spring). Snails also love the crunchy leaves but the good news is it often grows quickly enough to outpace major damage.
